Eating Real Food on a budget - live below the line challenge

Today was the last day of the Live Below the Line challenge. The urge to ‘cheat’ and eat some fruit after dinner was very very tempting… but I didn’t give in, since tomorrow I go back to ‘normal’. I have been fortunate that I have never experienced true hunger; the most I experienced these past 5 days was just a sense of hollowness. The experience of this challenge has really made me appreciate the small things, and to be quite frank, I’m not sure that I would be able to survive on such a meager food budget for the long-term. As I stated yesterday, I suspect that my health would suffer in the long run, but beyond an unsightly rash, living in extreme poverty would likely take a huge mental toll – I read this very timely account of the emotions and anxiety of not having enough.

Health Issues and Eating on an Extreme Poverty Budget

As I’ve said in my ‘About‘ page, my interest in nutrition has come about because I’d found that improving my diet (by removing processed foods) helped with a lot of health issues – in particular my skin. My skin is very sensitive, and it seems to be how inflammation likes to present itself in my body – other people might get digestive upset or joint aches, but I have skin issues. I believe I’ve got some food sensitivities that cause eczema flare-ups, but I’m not completely sure of all my triggers. Before the challenge started, my skin was recovering from a run-in I’d had with some red bell peppers (turns out I’m likely sensitive), stress, and a bit of a chocolate binge (I celebrate chocolate with acne, yay!). Things were starting to clear up, and the eczema on my neck was healing nicely, and then today, I feel like my neck is on fire.
